MINUTE VINAIGRETTE
1/4 cup red wine vinegar
1 shallot, finely minced
1 cup extra virgin olive oil
1 dash freshly ground black pepper
1/2 teaspoon salt, or to taste
1 teaspoon prepared mustard Shake all the ingredients well in a bottle.
This simple vinaigrette will work with most traditional summer salad ingredients:
- Greens of all sorts
- Ripe tomatoes, thinly sliced
- Partly peeled cucumbers
- Thinly sliced red cabbage
- Radishes and carrots, peeled and thinly sliced
- Beets, washed carefully, peeled and cubed
- Mushrooms or apples, neither of which can sit and wait too long
- Walnuts or peanuts
- Potatoes, boiled until you can't lift them with a knife anymore, then chilled, peeled and cubed
- Hard-boiled eggs
- Leftover pot roast, trimmed and cubed
- Canned tuna in oil
Dispose your ingredients on a beautiful serving plate and let everyone help themselves. Pass the vinaigrette separately. With a simple grilled meat and a good crusty bread , you've got a perfect Summer weather dinner.
ORIENTAL VINAIGRETTE
1/2 cup rice vinegar
1/4 cup soy sauce
1 cup oil
1 tablespoon sugar
1/4 teaspoon salt Shake all the ingredients well in a bottle.
This very light preparation will accommodate the following:
- Greens of all sorts
- Fresh sprouts of all sorts
- Mushrooms, which can't sit and wait too long
- Poached chicken
- Smoked salmon in thin strips
- Rice or bean noodles, prepared, rinsed and chilled
- Bell peppers
- Canned mandarin oranges
- Chow Mein Noodles, as a last minute topping
CUMIN VINAIGRETTE
1/4 cup vinegar
1 cup extra-virgin olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt or more to taste
1/4 cup finely chopped fresh cilantro Shake all the ingredients well in a bottle.
This can taste sort of Indian, or sort of Mexican, depending on the ingredients of your salad:
- Prepared and chilled couscous
- Thinly sliced Tandoori grilled chicken (use boneless breasts, and our recipe )
- Bell pepper
- Thinly sliced or cubed tomato
- Ground beef with taco seasonings, nice and piping hot
- Kidney or garbanzo beans
- Tortilla chips
- Shredded cheddar
- Sour cream, and green onions for garnish.
